单不饱和脂肪酸作为一类膳食脂肪酸,具有其特有物理化学特性和特殊生理功能。该文介绍 单不饱和脂肪酸的营养及其功能特性。

Abstract:

Monounsaturated fatty acids (MUFA) were regarded as a kind of fatty acid of dietary fatty acids, it has special physiological functions and physical and chemical properties. The nutrition and functional properties of MUFA were introduced in the paper.
